Fantasy of Flight Seated Corporate Dinner

Last Monday Night, Big City Catering catered a seated corporate dinner event at the north and south hangers at the very cool venue of Fantasy of Flight from 6:30-9:30PM.

The event was for Jones Lang LaSalle, and seated 175 guests who were greeted with wine and hors d’oeuvres when they got off their provided transportation at the north hanger of the fantasy of flight museum. Once they had their fill of wine, it was time to move to the south hanger where the main dinner reception was set up! The guests were entertained by live music, bars, and some gambling!

 

Here’s the nights menu:

6:30-7:15 Cocktail Reception-
Butler passed red and white wine with bar service for other drinks.

Butler Passed hors d’oeuvres-
-Sundried Tomatoes with Basil Creme Fraiche.

-Tequila Lime Pulled Pork served on crisp friend plantain with Mango Chipotle Salsa.

-Beef Chimichurri Skewers marinated in garlic and cilantro and served with chimichurri vinaigrette.

-Pan Fried Crab Cakes with Caper Remoulade.

7:30-9:30 Reception Dinner

Pre-set salad
-baby greens with hearts of palm, pear tomatoes, walnuts and bleu cheese crumbles and shallot vinaigrette dressing on tables

Dual Entree
-Medallions of Beef &Grouper
-Bordelaise and leek sauce with crescent potatoes
-Yeast rolls and whipped butter on tables

Desert
-Key Lime Pie, freshly baked with a crunchy graham cracker crust lightly topped with chipped cream.

What’s included in your basic rental package?
Space only in our basic rental of hangars; the Orlampa Conference Center includes limited supply of classroom tables, banquet chairs and access to A/V. The Officer’s Club includes tables and gray-padded folding chairs. All other elements/upgrades are separately priced.


What kind of add-on items does your venue offer that are not in the basic rental price?
Everything from entertainment to photo service to fireworks/special effects – we can do it all.




When can vendors come in to set up and deliver items?
Varies based on event scope and client needs.


Is there a space for the bride and groom to change and/or relax?
Yes






Who will be supervising and troubleshooting the day of the wedding?
A member of our dedicated sales & service staff.


Are there limitations on decorations?
Yes – dependent upon which space is being utilized.


Are any other events or weddings booked for the day of the event?
It is possible but there are buy-out options.
Is there a coordinator available from the venue to help or do clients have to hire one separately?
Event oversight is included however, expectations should be discussed in advance.

Do clients need to use any specific vendors?
Yes. We have preferred vendors and it is our policy that all services are provided/contracted through Fantasy of Flight.
When can clients do a rehearsal?
We’re flexible but most clients like to do the rehearsal the day/evening prior – 1 hour rehearsal at no charge, we can also provide rehearsal dinner.
What will they do if it rains (if you’re having an outdoor ceremony)?
We have several indoor options.
What information do you think clients often overlook in the contract?
Payment schedule and date to guarantee final count for food/beverage.
