Meet The Team
With more than seventy team members, many of whom have global experience in the culinary arts, you begin to understand why “Big City” is so appropriately named. From preparation to presentation, our management team has collectively gathered more than a hundred years of hospitality and catering experience and we use that knowledge to create legendary events for our customers.
The careful coordination of the Culinary and Operations teams blends menu creations and logistics into a seamless experience enjoyed by both guest and host alike. From the simplest party to the most lavish, casual or elegant, Big City is ever mindful of the details, assuring a successful event, regardless of budget.
Tom Pokorny
Born and raised in North Dakota, Tom Pokorny built his career from the ground up in the restaurant world before moving to Orlando in 1994. He joined Universal Orlando’s Catering & Special Events Department, where he quickly rose through the management ranks. There, Tom led teams that executed everything from intimate V.I.P. dinners to large-scale convention experiences serving up to 20,000 guests—often on tight timelines and with exacting standards.
After additional leadership roles with respected Orlando catering firms, Tom acquired the former Fenwick Caterers and developed the concept that became Big City Catering. As Owner and President, he blends culinary creativity with disciplined operations, insisting on flawless service, innovative presentation, and cuisine that’s as memorable as the moment. Under Tom’s direction, Big City Catering is known for transforming client vision into seamless, first-class events—whether it’s a private celebration, a corporate gala, or a multi-day conference—always delivered with genuine hospitality and meticulous attention to detail.
Our Team
Tracy Harper joined Big City Catering in 2011 with over 35 years of industry experience. She has a soulful passion for making others smile. She handles multiple aspects of Big City’s staffing and operations from corporate events to weddings. On the day of your event, Tracy is a blessing to her clients – putting any worries at ease. Her supervision of every detail is executed so keenly she makes it look effortless. From performing as a professional musician to owning her own restaurant and catering business, Tracy is a true renaissance woman of the entertainment world.

Jaimz joins the Big City team with over 20 years in the wedding and event industry ranging from cakes to floral and now catering. Sales is the name of her game and she’s at her best when finding ways to make clients’ budgets work for their celebrations. A mom of 2, she likes swing dancing and appearing on stages all over central Florida entertaining in various shows through the year.

With nearly 20 years of experience in hospitality, customer service, and sales, Kristina brings both expertise and genuine care to every event. A proud graduate of UCF’s Rosen College of Hospitality Management, she’s been part of the Big City Catering family since 2011—not just professionally, but personally, having trusted them for countless special occasions of her own. Kristina will guide you through the planning process, offering thoughtful advice on food and beverage choices to ensure a seamless and memorable experience from start to finish.

Born and raised in Connecticut, Thomas Gulli has worked in the Culinary Industry since he was a teenager. After graduating from The Culinary Institute of America in the mid-nineties, he has continuously refined his craft in venues of all shapes and sizes. At Big City Catering, Chef Thomas is the heart of our kitchen and menus. From preparing our cuisine to topping off the final garnishes at your event, Thomas strives for ultimate perfection with his food. When he is not in the kitchen or with his family, he also coaches and plays for local soccer teams.

Luis Alonso is a loyal, grounded family man with three children and a love for fixing things. He started at Big City Catering in 2004 working from the ground up and currently executes the majority of our culinary endeavors. Born in Havana, Cuba, Luis traveled to the United States in the early nineties to live the American Dream. After spending time in the Logistics Industry, he answered his calling in the kitchen. Since a young boy, Luis was happiest cooking Latin cuisine with his grandmother.

James has over 30 years of catering experience in the Central Florida area. His attention to detail and ability to anticipate guests’ and clients’ needs has made him an amazing asset to Big City Catering. Most of his regular clients have been loyal to him for more than 15 years, yet he continues to make new “believers” every day. James handles our corporate accounts from first contact to final clean-up. He has experienced every position at Big City from Operations to Sales and excelled at each one.

Event Manager
Born in England, Chef Roy trained at the renowned Westminster Culinary Academy before becoming Executive Chef at New York’s Knickerbocker Club. He befriended the Rockefeller family and cooked for Heads of State, including the Queen of England, Princess Diana, the President of Japan, and the Pope. Later, KLM Airlines recruited him to lead First Class dining research and development. Admired for his culinary mastery and stunning presentations, Chef Roy was a valued mentor to our team and will be deeply missed.

Big City made our wedding day so special!! Each meal was so delicious and personalized. During the tasting the chef was extremely accommodating, and you could tell he had a passion for the food Big City creates. They were amazing throughout the entire wedding planning process, and they provided food that truly reflected my husband and I. For example, when we were choosing the hors d’oeuvres during the tasting, I loved the raspberry brie tarts, but we ending up choosing something else over them. On my wedding day, they placed a few raspberry brie tarts on my plate just for me! They are so thoughtful, and I can’t thank them enough for everything. Thank you so much, Big City!! Everything was perfect and delicious!!

Delicious food, friendly catering staff, and excellent customer service! In true covid wedding fashion, I was eight weeks out from my wedding in search of a catering company along with half of my other wedding vendors. My venue recommended BCC. After reading their stellar reviews and multiple awards, I felt comfortable booking without a tasting. Let me start by saying that Madeline is fantastic!! From our first conversation to her response to my 30th email, she was always responsive, helpful, and professional. The food was delicious! All of my guests raved about how good the food was! Lastly, my husband and I had a staff member that would check in with us throughout the night. She brought us appetizers, drink refills and even had dinner waiting for us at the sweetheart table. I could not recommend BCC more, their staff was excellent, and the food was delicious!
We had the pleasure of having Big City Catering as our vendor for our wedding day through Luxmore Grande Estate and we can not say enough great things about them. All of our food for the event was INCREDIBLE! From the build your own mac and cheese bar to the prime rib carving station, every item was delicious. We also appreciated that when we had our tasting the Chef encouraged honest feedback and catered our menu specifically to us. Thank you Big City Catering!
Big City was more than just the caterer at our Wedding but family! They made our special day nothing short of perfect!!! Everyone kept coming up to us throughout the night to compliment the food! Narrowing down our menu was the hardest part because we wanted to have EVERYTHING! Big City Catering was the catering company that came with my venue, Luxmore Grande Estate. However; even though I did not personally “select” them, they really blew me away. They were wonderful to work with, from the suggestions and helpfulness at our tasting, to the piping hot and super tasty food on the night of our wedding. I have absolutely no complaints. Everything was delicious and all of the guests were raving about how wonderful the buffet food was. I highly recommend Big City Catering for any event catering. p.s. ask them for chimichurri sauce with their medallion steaks. Yum!
I had my wedding at Paradise Cove and Big City Catering was amazing! The team was wonderful with remaining in contact with me throughout the wedding planning process and answering my questions! The food and service was wonderful and people were raving about it that night and days after. Everything ran smoothly and they were super accommodating to kiddos and people with food allergies! I would certainly recommend Big City to any bride to be friends!
We had our wedding at Cypress Grove Estate house and they use Big City Catering for all of their weddings. We chose to do the group tasting and did not get to taste all of the dishes we originally wanted to try so I’d suggest doing a private tasting if you want to specifically taste something. We did however love our final dish. Our guest also raved about the food and said it was the best wedding food they’ve ever had. We ordered the tomato bruschetta, buffalo meatball, pork sliders, herbed grilled chicken, bourbon street pork, green beans almondine, and mashed potatoes. Very happy with choices.

Big City Catering did our wedding at The Luxmore Grande. What delicious food! Everyone we’ve talked to has said it was delicious- some even said it was the best food they’ve had at a wedding EVER. The chefs are wonderful, and we were thrilled with everything. We highly suggest them!
