The Ambiance

 

We turned the park into a Backyard Red Carpet BBQ Bash!  With Tiki torches, market lighting, and fire pits in the surrounding atmosphere, the guests were taken away to Low Country. The guests ate and socialized and relaxed on Adirondack chairs and wicker lounge furniture {with Kronos branded pillows}, they enjoyed the sounds of steel drums and vocals by our Jimmy Buffet tribute band.  The night was filled with {Margaritaville} tunes to complement the laid back vibe.  Scattered across the lawn, a collection of games included: a corn hole tournament, kan-jam, horseshoe toss, and your all-American, redneck beer pong.  The vibe for the night emphasized the Redneck Regal theme.

 

 

 

 

Tequila-Lime Pulled Pork: Tequila marinated Pork shredded and served on crisp Fried Plantains topped with a Mango Chipotle Salsa {Passed on large banana leaves}

Ahi Tuna Canapé: Seared Ahi, Black and White Sesame Seeds, Cucumber, Wasabi Mayo and Pickled Ginger
{Passed on chilled handcrafted wooden slabs}

 

Bacon Wrapped Tater Tots: Peppered Hickory-Smoked Bacon wrapped around a Tater Tot then baked until crispy {Passed on chalkboard slates}

 

 

 

The Pit included a spread of Tender Steaks and a variety of BBQ Chicken grilled to perfection!

 

 

Succulent Crab and Shrimp simmered with Old Bay and Creole Seasonings, Ears of Corn, New Potatoes, Onions, and heads of Garlic.

Fantasy of Flight Seated Corporate Dinner

Last Monday Night, Big City Catering catered a seated corporate dinner event at the north and south hangers at the very cool venue of Fantasy of Flight from 6:30-9:30PM.

The event was for Jones Lang LaSalle, and seated 175 guests who were greeted with wine and hors d’oeuvres when they got off their provided transportation at the north hanger of the fantasy of flight museum. Once they had their fill of wine, it was time to move to the south hanger where the main dinner reception was set up! The guests were entertained by live music, bars, and some gambling!

 

Here’s the nights menu:

6:30-7:15 Cocktail Reception-
Butler passed red and white wine with bar service for other drinks.

Butler Passed hors d’oeuvres-
-Sundried Tomatoes with Basil Creme Fraiche.

-Tequila Lime Pulled Pork served on crisp friend plantain with Mango Chipotle Salsa.

-Beef Chimichurri Skewers marinated in garlic and cilantro and served with chimichurri vinaigrette.

-Pan Fried Crab Cakes with Caper Remoulade.

7:30-9:30 Reception Dinner

Pre-set salad
-baby greens with hearts of palm, pear tomatoes, walnuts and bleu cheese crumbles and shallot vinaigrette dressing on tables

Dual Entree
-Medallions of Beef &Grouper
-Bordelaise and leek sauce with crescent potatoes
-Yeast rolls and whipped butter on tables

Desert
-Key Lime Pie, freshly baked with a crunchy graham cracker crust lightly topped with chipped cream.
