Papaya Pineapple Salsa

Hope you all didn’t forget about our special fruit this month, Papaya! When cooking with Papaya, you’re adding not only a tangy taste to your food, but your also adding some health benefits too! A small papaya contains about 300% of the recommended daily amount of Vitamin C. So just by using a half of this healthy fruit, you are still getting more then your daily recommended dose of Vitamin C! The recipe below is for Papaya Pineapple Salsa, and it uses 3/4 cup of a ripe papaya. The salsa is the perfect healthy twist to serve with tortilla chips or even to put on top of a nicely grilled Mahi Mahi. And it’s easy too!


3/4 cup ripe papaya
Diced3/4 cup fresh pineapple
Diced3/4 cup diced jicama

1/4 chopped red onion
1 serrano or jalepeno chili pepper, seeded and minced
1 garlic clove, minced
2 teaspoons grated lime zest
2 tablespoons fresh lime juice
1 tablespoon balsamic vinegar
1 tablespoon minced chives
1 tablespoon minced cilantro


Place papaya, pineapple, jicama, chile, garlic, lime zest, lime juice, balsamic vinegar, chives, and cilantro in a large bowl. Toss gently to combine. Cover with plastic wrap and refrigerate until serving time. *Make no more than two hours in advance for best flavor and texture.
